Weight Watchers has changed their program. The points listed on my blog for WW points is for the old Momentum program.

I will be updating my recipes for the new Points Plus program. I am going to list the 4 nutrients needed to calculate the Points Plus for the recipe so that you can easily figure the PP per serving.

I am going to leave the old Momentum Points in case anybody is still following that program.

Pumpkin Spice Cake ~ Weight Watchers

1 Spice cake mix
3 eggs
15 oz. pumpkin puree

Combine cake mix, eggs and pumpkin puree; stirring until well combined. Pour into a 9x13 baking pan sprayed with nonstick spray. Bake at 325 until tests done (I start checking at 30 min.).

YIELD: 12 servings
1 serving = 4 WW points; 6 WW P+

***Bake in muffin pans. This makes 24 muffins at 2 points each.

Melt in Your Mouth Muffins ~ Sonlight Forums

8c all purpose flour (I use soft whole wheat)
3c sugar
2Tbs baking powder
2tsp salt
2tsp cinnamon
2t nutmeg

Muffins
2 3/4 mix
1 egg beaten
1c skim milk
1/2 c melted butter or vegetable oil (I use applesauce and the WW)

Combine the liquids in a small bowl. Add dry ingredients. Stir till moist. Should be lumpy.

Fold in fruit of choice. Pour into greased muffin pan/s.

Bake in preheated oven at 400 degrees for 18-20 minutes

Any fruit can be used. Fresh, dried, etc. if a banana only need 1/2 a banana. You can add nuts, too. This is so versatile and very yummy.

If you want a topping mix sugar (brown or white) with oatmeal and butter.

Muffin Mix Yields 4 batches
Each batch Yields 12 muffins

1 muffin made with applesauce, whole wheat flour and skim milk = 3 WW points
