Weight Watchers has changed their program. The points listed on my blog for WW points is for the old Momentum program.

I will be updating my recipes for the new Points Plus program. I am going to list the 4 nutrients needed to calculate the Points Plus for the recipe so that you can easily figure the PP per serving.

I am going to leave the old Momentum Points in case anybody is still following that program.

Orange Cake ~ Weight Watchers

1 box white cake mix, dry
1 small can mandarin oranges, drained
12 oz. diet orange soda (I use regular); Faygo brand is the best for some reason
2 egg whites
8 oz. fat free Cool Whip

Stir together cake mix, oranges, soda and egg whites.  Pour into a 9x13 baking dish sprayed with oil or cooking spray.  Bake at 350F for about 33 minutes.

Cool and then spread Cool Whip over top.

YIELD:  18 servings; 1 serving = 3 WW points; 4 WW PP
1/12 = 6 WW PP

Mexican Lentils ~ Healthy Cooking

1 medium onion, chopped
2 garlic cloves, minced
1 tsp. olive oil
1 1/2 c. vegetable broth
1/2 c. dry lentils, rinsed
3 tsp. chili powder
1 1/2 tsp. ground cumin (I also used PC SW seasoning)
1 c. frozen corn
1 c. salsa, fat free
1/4 c. tomato paste
1 tsp. dried oregano
1 tsp. white vinegar

In a large saucepan, saute onion and garlic in oil until tender.

Add the broth, lentils, chili powder and cumin.  Bring to a boil.  Reduce heat; cover and simmer for 20-25 minutes or until lentils are almost tender.

Stir in the corn, salsa, tomato paste, oregano and vinegar (I also added salt and pepper).  Bring to a boil.  Reduce heat; cover and simmer 10 min. longer or until lentils are tender.

Serve with brown rice and cheddar cheese.

YIELD:  4 cups lentils
1/2 c. = 1.5 WW points; .9g fat, 13.2g carbs, 2.8g fiber, 2.8g protein
3/4 c. - 2.5 WW points; 1.5g fat, 21.1g carbs, 4.5g fiber, 4.5g protein
1 c. = 4 WW points; 1.8g fat, 26.3g carbs, 5.6g fiber, 5.6g protein

Mom's Meat Loaf ~ Taste of Home

2 eggs
3/4 c. milk
2/3 c. finely crushed saltines
1/2 c. chopped onion
1 tsp. salt
pepper to taste
1/2 tsp. rubbed sage
1 1/2 pounds lean ground beef (I use 95% fat free)
3/4 c. ketchup
6 T brown sugar
1 tsp. Worcestershire sauce

In a large bowl, beat the eggs.  Add milk, saltines, onion, salt, sage and pepper.  Add beef and mix well.

Shape into 8 equal sized mini loaves and place on a baking sheet sprayed with oil.  Combine remaining ingredients; spread over mini loaves.

Bake at 350F for 40-45 minutes.

YIELD:  8 servings
1 mini meatloaf = 4 WW points; 5 WW P+
