Weight Watchers has changed their program. The points listed on my blog for WW points is for the old Momentum program.

I will be updating my recipes for the new Points Plus program. I am going to list the 4 nutrients needed to calculate the Points Plus for the recipe so that you can easily figure the PP per serving.

I am going to leave the old Momentum Points in case anybody is still following that program.

Buckeyes

1 lb. butter
2 lb. peanut butter
3 lb. confectioners' sugar
1 package chocolate chips
2T crisco or butter

Mix together butter, pnb and sugar. Shape into 1" balls. I use the small cookie scoop. Roll them into nice balls. Place on wax paper lined cookie sheets and chill until firm.

Melt chocolate chips and crisco (I use more chips than this. I just keep adding as it gets low). Dip each ball 3/4 of the way into chocolate. Return to cookie sheet and chill until set.

They are called buckeyes because they look like buckeyes from the tree.

YIELD: 15 dozen; 1 = 2 WW points

Microwave Peanut Brittle (My Mother-in-Law)

1 c. sugar
1/2 c. lite corn syrup
1/8 tsp. salt
1 1/2 c. roasted salted peanuts
1T butter
1 tsp. baking soda
1 tsp. vanilla

In a 2 qt. bowl, dissolve sugar, corn syrup and salt in the microwave on high for 5 minutes. Stir and add peanuts, microwave on high for 5 minutes more. Continue microwaving, stirring every 30 seconds, until lightly browned. Add last 3 ingredients and stir very fast. Spread thin over buttered cookie sheet (or line with parchment paper but NOT waxed paper because it will stick to the waxed paper), working quickly. Let stands 10-15 minutes and break into pieces.
