Weight Watchers has changed their program. The points listed on my blog for WW points is for the old Momentum program.

I will be updating my recipes for the new Points Plus program. I am going to list the 4 nutrients needed to calculate the Points Plus for the recipe so that you can easily figure the PP per serving.

I am going to leave the old Momentum Points in case anybody is still following that program.

Grilled Chicken over Spinach ~ Taste of Home

2 T olive oil
1 T cider vinegar
1 garlic clove, minced
1 tsp. dried thyme
1/2 tsp. dried oregano
1/2 tsp. cayenne pepper
1/4 tsp. salt
dash pepper
4 boneless skinless chicken breast halves (4 oz. each)

SAUTEED SPINACH:
1 green onion, finely chopped
2 garlic cloves, minced
2 T olive oil
1/2 lb. fresh mushrooms, sliced
10 oz. torn fresh spinach

In a bowl, combine the first eight ingredients; mix well. Spoon over chicken. Grill, uncovered, over medium heat for 7 minutes on each side until juices run clear.

In a large skillet, saute onion and garlic in oil for 1 minute. Stir in mushrooms; saute for 3-4 minutes or until tender. Add spinach; saute for 2 minutes or until wilted. Transfer to a serving platter; top with chicken.

YIELD: 4 servings
1 chicken breast = 4 WW points
1/4 spinach = 2 WW points
